Buttery Apple Cider Carrots

A big bunch of Carrots
4 T Olive Oil
4 T Currant Siren Shrub
2 T Butter
Salt + Pepper to Taste
A few sprigs of Thyme

Preheat oven to 375°F.

Mix olive oil and Currant Shrub in a large bowl.
Toss sliced carrots in the shrub and olive oil mixture.

Spread carrots out evenly on baking dish. Add salt, pepper and sprigs of thyme.

Bake for 25 minutes.
Before serving toss with 2 TBL butter and a dash of salt.
