The Melon & Mint
3 cups watermelon (diced or use melon baller)
3 cups sliced strawberries
2 cups cantaloupe (diced or use melon baller)
1 cup sliced cherries
LIME MINT DRESSING:
¼ cup freshly squeezed lime juice
¼ cup Honeycrisp Shrub
1 tsp agave or honey
⅛-¼ tsp sea salt
3 tbsp finely chopped fresh mint
1 ½ tbsp finely chopped fresh basil
In a bowl combine prepared fruit. In a separate bowl whisk together all ingredients for lime mint dressing. Place dressing on fruit stirring to incorporate. Place in the refrigerator for one hour to let flavors meld. Serve cold.
